Pickle is the name given to food that has been submerged (marinated) in a salt solution. It can be preserved using vinegar.
The most usual pickles in Spain are combinations of olives and gherkins, plain olives or the classic “banderillas”, which are mini-skewers of olives, gherkins, peppers, chillies and baby onions.
Gourmet olives are characterised by their terse skin and fleshy centres, stuffed with a variety of both sweet and savoury fillings. Gourmet olives are presented in both jars and cans that contain top-quality olives from the best harvests.
